A contemporary Hong Kong umeshu house.

Time waits for no one. But some flavours can only be born from it. Founded in Hong Kong in 2020 by Eddie Ng,
TinShing brings Japanese ume, considered craft and a creative perspective into every expression.

“

Brewing taught me that some things cannot be rushed. The first plums go in — that is the beginning. Then comes the waiting. Then the second harvest is added, and the old meets the new. And when the bottle is finally opened, you understand: the waiting was worth it. That is the meaning of time.

- Eddie Ng, Founder, TinShing Umeshu
Where it began

TinShing began with an impulse

For Eddie, the memory of his father occasionally making umeshu at home was a small but lasting spark: a time for family to wait, share and come together.
As a director, screenwriter and producer, he brought the same attention to rhythm, light, texture and detail into TinShing. Umeshu became another creative medium — a way to turn a fleeting moment into something that could be tasted, shared and remembered.

The meaning of TinShing

Choose the materials. Do the work. Leave the last step to time.

TinShing takes its name from something becoming complete in its own time — naturally, patiently, without unnecessary embellishment. Japan gives the ume, and a reverence for precision. Hong Kong gives the perspective. Respect the origin. Make our own expression.

Four commitments, made visible.

  • Craft Without Compromise

Care in selecting ume, choosing the
    base and shaping each expression.

  • Respect Time

    Give the two harvests
and maturation the time they need.

  • Create with Curiosity

    Explore different bases, then extend
    CLASSIC through ingredients.

  • Made for Life

For tables, gifts and moments worth remembering.
